Instructions

Cook your brown rice according to the package instructions.

Cut the leeks lengthwise, clean them, then cut them into sections.

At medium-high heat, let them melt for about five minutes, then lower the heat to low (I set it to 3) and let them simmer for 25 minutes, stirring occasionally.

5 minutes before the end of cooking the leeks, place the eggs in a saucepan of cold water, bring to a boil, once the water is boiling, cook for 3 minutes over medium heat (I put 5)

The yolks should be runny to mix well with the leeks and to preserve their nutritional benefits. The whites, on the other hand, should be well cooked.

Once cooked, the leeks are tender
