    Goji berries(or dried grapes (will increase the glycemic index))

Instructions

Peel and chop the butternut squash into rough pieces.

Let the onion brown for a few minutes with a little olive oil and curry over medium heat

Then add the red lentils and cover with water (or broth)

Cook for 10 minutes, then add the previously washed spinach.

Extend the cooking time by about 10 minutes (check the cooking time on the lentil package).

Crush 300g of cooked butternut squash in the pan (coarsely)

Sprinkle peanuts and goji berries

Serve with rice (brown for a low GI)
