Ingredients
- 11 roomButternut squash
- 2100 gramsBuckwheat flour
- 3130 gramsLittle spelt flour
- 44 partsegg
- 53 tablespoonsGoji berries
- 660 gramsNut
- 71 spoonBaking powder
- 81 tablespoonBlack sesame seeds(Optional, for decoration)
- 950 mLOlive oil
Instructions
Prepare the butternut squash soup: peel and roughly chop the butternut squash, cook for 30 minutes over low heat with 60ml of water, then blend.
Mix the flours and the yeast.
Separately, mix the eggs, the oil, and the soup.
Then add the flours, mix everything, and finally add the goji berries, the feta cheese in pieces, and half of the chopped nuts.
Pour into a lined loaf pan, sprinkle the remaining chopped nuts and sesame seeds (optional)
Bake for 25 to 30 minutes at 180°C in a convection oven; it's ready when the knife comes out clean.
