Instructions

Wash, slice, and cut the leeks into strips

Sauté for 3 minutes in a pan with olive oil

While waiting, cut the candied lemons into very small dice, remove the seeds

Add the candied lemons and cumin, salt and pepper to taste

Add a little water (the leeks should be covered) and let it cook until evaporation

Make 8 wells in the pan, crack an egg in each well
