Ingredients
- 1350 gramsParis mushroom
- 22 partsShallot
- 31 tablespoonParsley
- 41 podGarlic
- 51 roomLamb's lettuce
- 68 partsEgg
- 74 tablespoonsOlive oil
- 81 tablespoonBalsamic vinegar
- 920 cLRice cream(Or other vegetable cream)
Instructions
Preheat the oven to 150D
Slice the mushrooms
Grind the garlic clove and chop the parsley
Slice the shallots
Brown the mushrooms and shallots in 2 tablespoons of olive oil
When they are golden, add the grated garlic clove and the vegetable cream.
Salt, pepper and let simmer for 5 minutes
Grease 4 ramekins, distribute the mushroom mixture among them
Break 2 eggs into each ramekin
Place the ramekins in a baking dish
Put in the oven, pour water halfway up the dish for a bain-marie cooking and cook for about 10 minutes: the yolk should be runny, the white should be cooked
Sprinkle chopped parsley after removing from the oven
