Ingredients
- 1600 gramsRhubarb
- 21 spoonGinger powder
- 31 spoonCinnamon
- 4150 gramsWhole grain spelt flour
- 590 gramsGhee
- 690 gramsCoconut sugar
Instructions
Knead the flour with ghee, 30g of sugar and a pinch of salt. Act quickly with the fingertips simply seeking to absorb the flour without obtaining a smooth dough.
Form a ball, let it rest for 30 minutes in the fridge
While waiting, peel and cut the rhubarb stalks
Cut into 2 cm pieces in a salad bowl
Sprinkle with the remaining sugar (60g), ginger, and cinnamon
Let it soak for 30 minutes
Drain the rhubarb and arrange it in a baking dish
Preheat the oven to 180°C (thermostat 6)
Tear the dough into very small pieces and arrange them on the rhubarb
Cook for one hour.
