Instructions
Cut the carrots and potatoes into large, rough chunks
In a pot, put the vegetables, the lemongrass, the bouillon cubes
Crush 10 cm of ginger and the garlic cloves
Add to the pot the ginger, the garlic, the peeled shallots, and the broccoli (stem and florets)
Pour in water just to cover the ingredients
Bring to a boil and cook for 20 minutes
Add the whole bunch of cilantro (keep a few leaves for decoration)
Add the coconut milk
Cook over very low heat for 5 minutes
Mixer
Sprinkle with mint leaves and coriander
Serve with bread
