Ingredients
- 18 partsEgg

Instructions
Peel and mince the onions, grate the garlic, wash the tomatoes and cut them into small pieces
In a pan, sweat the onions in a little olive oil
Add the grated garlic and stir, add the cut tomatoes; salt, pepper
Add the basilica
Simmer over low heat for 10 minutes
While waiting to rinse the peppers, deseed and remove the white membranes that are bitter, mince
Add the peppers to the pan, making room for them to be close to the heat, add the paprika and cook for 5 minutes
Break the eggs, make room for each egg to not break the yolk
Cook over medium heat until the white is cooked.
Serve with seasoned arugula and bread or another starch (quinoa, rice, ...)
